I know what you’re thinking.
Claire, peanut butter and pumpkin don’t go together, unless you’re talking about pumpkin-shaped Reese’s!!!
Trust me on this one you guys.
It is a widely known fact that I consume more peanut butter than is probably recommended, so to those who know me well, the idea of peanut butter pumpkin bread isn’t entirely shocking.
I am fully aware how weird this combo seems, I too was skeptical when I first came across this idea. But if you like peanut butter even half as much as I do, you have to try this!! The recipe I saw included chopped up Reese’s Peanut Butter Cups (yum), but I went with a mix of peanut butter chips and chocolate chips.
If you’re still not convinced, at least try making this pumpkin bread – you can make it plain, with chocolate chips, or walnuts! This recipe is something I’ve tweaked a few times, so I’ll let you know where you can make some changes to fit your tastes.
Alright, let’s get cooking!!
First up, preheat the oven and gather your ingredients! This isn’t everything I used, but I thought it would be helpful to see what brands/exact products I used.
Like most recipes, you’ll want to first mix your dry ingredients and set them aside. If you want to add ground cloves, go for it! I don’t love the taste they add, but most pumpkin recipes use them. And make sure your nutmeg is properly mixed in – it can get in little clumps and trust me, you don’t want to take a bite of that…
Next, you’ll mix all your wet ingredients. Mixing the butter and sugar was a struggle without an electric mixer (#dormlife am I right??), and I’m not gonna lie I definitely had to get in there with my hands. After adding your pumpkin, it’s going to look grainy (see photo below) but don’t worry!
After mixing the wet and dry ingredients you can toss in your peanut butter chips or whatever else you’ve decided to add!
Don’t forget to grease your pan – I like to use butter and then sprinkle some flour on top so the loaves come right out after baking. Once the batter is in your pan, I like to sprinkle more chocolate and peanut butter chips on top! Now time to pop them in the oven!
