I posted a pic of the banana bread I made a few weeks ago and a few of y’all asked that I put the recipe on here! The original comes from a cookbook my mom has, but she’s modified it a little bit to perfect it!
*This should be enough to make one large loaf or two smaller ones. You can also put the batter in muffin tins*
Ingredients
- 1/2 cup vegetable shortening
- 3/4 cup sugar
- 1 large egg
- 4 teaspoons lemon juice
- 1 teaspoon vanilla extract
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 or 3 ripe bananas (3 is best!)
- 1 cup walnuts, chocolate chips, or anything else you might want to add!
Directions
- Preheat oven to 350 degrees.
- Mix together shortening and sugar (preferably with an electric mixer). Add in egg, lemon juice, and vanilla.
- Mix together flour, baking soda, and salt. Combine dry and wet ingredients.
- Mix in mashed banana.
- Add in walnuts, chocolate chips, etc.
- Either line pan with parchment paper or cover in butter and flour so the loaf doesn’t stick.
- Pour into loaf pan. I like to sprinkle to top with extra chocolate chips, and my mom likes to add a few pats of butter and sprinkle brown sugar on top!
- Bake in oven for 60-70 minutes.

This is one of my favorite recipes!! I’ve found myself making it quite a few times since living in my own apartment because I’m always buying bananas and not eating them before they turn brown.. Lol! Could be worse though, am I right?
